Dragonboat Festival is a festival celebrated in the 5th month on the 5th day of the Lunar calendar and every year, we celebrate by eating Sticky Rice Dumplings (or zong in Chinese). Typically the sticky rice and bamboo leaves are prepared the night before, wrapped with strings, and then steamed for 2-3 hrs. (it is definitely a labour of love!) But for busy people, or people who forget to plan ahead of time, this method works just as well! Instant Pot, 1 hr, Done! Equipment: - instant pot (I have an 8-quart) - trivet - stainless steel bowl, preferably 3+inches depth Ingredients: - 6 pre-soaked Bamboo leaves - 2 cups glutinousu002Fstick rice - cooking oil - garlic, diced - 2.5 cups water, to soak the mushrooms - 1lbs pork bellyu002Fchicken thigh - 2 chinese sausage - 10 miniu002F5 large shitake mushrooms - 1 tbsp chicken broth powder - 2 cups of water (for inside the instant pot) Marinade for the porku002Fchicken: - 1 tbsp soy sauce - 1 tbsp oyster sauce - 1 tsp sugar Directions: 1. Soak mushrooms in the 2.5 cups of water, cut your meats into bite sized pieces (porku002Fchicken, sausages), and wash the rice. 2. After 20-30 minutes of soaking, remove the mushrooms from the water and dice them up. Keep the water! 3. Heat up your woku002Fpan, throw in the oil. When the oil is hot, toss in the garlic for a few seconds, then stirfry the porku002Fchicken, sausage and diced up mushrooms. Set aside. 4. Heat up your woku002Fpan again with more oil. When the oil is hot, throw in the washed rice and stir for a few seconds. Sprinkle in the chicken broth powder and toss. 5. Pour in the mushroom water. Lower the heat to medium and let it simmer until all the rice has fully soaked up the water. 6. While it's simmering, line your stainless steel bowl with pre-soaked bamboo leaves, making sure the bottom is covered by overlapping the leaves. 7. Layer on the rice and the meats, one by one. Cover the top by pinning the leaves down with a toothpick. 8. Place 2 cups of water inside the instant pot, place the trivet in the pot and the stainless steel bowl on top. 9. Pressure cook for 30 mins, 10 mins natural release 10. Serve with soy sauce or any other toppings you wish
